Thai Rabbit Salad

From Superior Seasons

Thai rabbit salad with fresh greens and fruit, topped with sesame seeds and a light Thai dressing.

According to Slow Food USA, rabbits can produce six pounds of meat on the same amount of feed and water it takes a cow to produce just one pound. And for urban farmers, they make a lot more sense than chickens. Rabbits are quieter, less smelly, and they’re easier to slaughter

Thai Spicy Basil Chicken (or Almost Any Meat or Seafood!)

From Athens Locally Grown

This chicken stir-fry made with Thai holy basil seems to be a favorite dish for Thais and Westerners alike. Fast and simple to prepare, it is sold in small Thai eateries as a quick one-plate meal served on a bed of steamed jasmine rice. (The number of fresh chilies makes this a spicy dish, but don’t let that scare you away — you can adjust the number downward to suit your taste.) In Thailand, basil-flavored stir-fries are frequently served for breakfast or for lunch, often topped with a crispy fried egg. Thai cooks will often substitute the chicken with pork, beef, squid, shrimp, or seafood, so feel free to do the same!

Servings: About 4, depending on people's appetites and the amount of rice that is included

This recipe will give you a Rotisserie Chicken right out of the oven. Unfortunately, I can’t seem to find the original recipe to give credit where credit is due. Whoever you are, thank you! Thin and Crispy Spelt Crackers

From Champaign, OH

These are delicious little crackers that lend well to spelt’s nutty tones. They are great with cheese, dips, or even alone. The thinner you roll them, the crispier they will be. You don’t have to use a food processor as the recipe calls for – I don’t have one… I just use a pastry cutter, but a fork or two butter knives work just as well :)
Vegetarian!
