Parmesan Roast Turkey

Ingredients
8 tablespoons
Unsalted butter (room temperature)
2 teaspoons
Fresh minced rosemary
2 teaspoons
Fresh minced thyme
2 cloves
Garlic (minced)
Zest from 1 lemon
1 1/2 cups
Freshly grated Parmesan cheese (divided)
Salt & pepper
1 10 to 12 pound
Turkey (spatchcocked)
2 tablespoons
Olive oil
Step by Step Instructions
- Preheat oven to 375 and fit a wire rack into a baking sheet.
- Combine the butter, fresh herbs, minced garlic, zest, salt, pepper, and 1/2 cup of Parmesan cheese until a smooth mixture is formed.
- Pat the turkey dry and season it with salt and pepper. Place it skin side up on the prepared wire rack in the baking sheet.
- Loosen the skin on the turkey breast and legs with your fingers, then rub the Parmesan mixture evenly on the meat under the skin of those areas
- Rub the olive oil over all of the (outer) skin of the turkey, then evenly sprinkle the remaining grated Parmesan all over the outside.
- Roast the turkey for 1 and a half to 2 hours, then let rest for 30 minutes before carving.
